Monday: Chicken, broccoli and quinoa casserole (I LOVE this casserole!!! I could eat it several times a day - even after it's de-dairyed)
Tuesday: Individual pizzas with homemade crust
Wednesday: Pork, chick pea and kale enchiladas
Thursday: Chicken Pot Pie
